BBQ Black Bean Hummus Bowls

This recipe is pretty customizable because it is essentially a salad or burrito bowl, but the main two ingredients that make this bowl special are the black bean hummus and bbq rice. If you have ever had a black bean burger you might know what a great pairing black beans and bbq sauce is, and if you have never had them together it is time to try! I started making these bowls about four years ago after having a similar meal at a local restaurant. The restaurant was one of the make your own bowl/burrito type places, and they had both black bean hummus and bbq rice. I loved that bowl, and since I could not afford to go out to eat much at all, I figured out a way to make my bowl at home. This recipe shows you how I like to put together my bowl, but like I said, this is very customizable so you can make swaps and add ingredients in to make it your own. I do make my bowls vegan, but if you would like to add toppings like sour cream, that is up to you.

You will need to start by making black bean hummus. Black bean hummus is essentially the same as normal hummus, but instead of chickpeas, you will use black beans. I also like to use lime juice instead of the lemon juice that is used in traditional hummus. You will need a good quality blender or food processor to make your own hummus from home. I use a Vitamix, and that always works great.

You will also need to make the bbq rice. This is not hard, I simply make my favorite rice, jasmine rice, and wants it is done cooking I mix in BBQ sauce until all the rice is covered.

The last thing I prep before assembling my bowls is a little veggie topping. You could easily use salsa here instead and skip this prep all together. I chop up some red onion, bell pepper, tomato, sear some corn, and mix that all together with some salt, pepper, and lime juice. You could also add in some cilantro here, if you are a fan.

To assemble the bowls, you can do it a couple different ways. You can keep all the components separate until your are putting together your own bowl, or you could make it more of a casserole style. One of the main things to keep in mind when assembling is if you want your cheese to melt, how are you going to make that happen? The easiest way is to start assembling your bowl, add the black bean hummus, bbq rice, top with cheese, then put in microwave until melted. This is how I used to make it when I had a microwave, but I do not have one anymore.

If you do not have a microwave, you could melt your cheese with your pot of bbq rice, I do this sometimes. You could also, if planning on serving a lot of people, you could assemble the whole meal into a casserole dish. Layer the black bean hummus, bbq rice, and cheese in a casserole dish, and heat in the oven until cheese has melted. You can then top it all off with the rest of your ingredients, lettuce, veggies, tortilla chips, etc. This will make an easy serving situation if you are feeding lots of people or your family. All that said, I’ll show you step by step how I typically assemble my bowl.

First, create your black bean hummus base. I like a lot, I probably use about 1/2 cup worth, but you get as much as you would like.

Add your bbq rice, then cheddar cheese. I melted by cheese with my rice, which is why they are combined here. You don’t have to melt your cheese, but I recommend it! This is the step you could melt your cheese in the microwave if you wish.

Next, I add a layer of crunchy romaine. I like to thinly slice my romaine.

If you like your salad or bowls to have a good crunch, don’t skip this step! Smash some tortilla chips and add them as the next layer. These are the Siete brand, they are my favorite tortilla chips!

Lastly, add your toppings! I added my little veggie mixture here. You can also top with salsa, sour cream, a bbq sauce drizzle, or anything else you want!

BBQ Black Bean Hummus Bowls

This is a very customizable recipe, just make sure you have the key ingredients, black bean hummus and bbq rice, the rest is up to you! This meal is packed with veggies and plant based protien, and it will fill you up!

Ingredients:


  • 3 cups cooked rice
  • 1/4 cup BBQ sauce (more to taste)
  • Cheddar Cheese (I use vegan but not necessary)
  • Lettuce (I use romaine)
  • Tortilla Chips
  • Optional: Salsa, Corn, Onion, Tomato, Bell Pepper, Sour Cream

For the black bean hummus:

  • 2 cans black beans or 1 1/2 cup dried black beans
  • 1/4 cup olive oil
  • 1/4 cup tahini
  • juice of 2 limes
  • 2 tsp cumin
  • 1/2 tsp smpoked paprika (more to taste)
  • 2 tsp salt

Instructions:

  1. If using dried black beans, go ahead and cook them. If using canned, skip this!
  2. Begin cooking your rice, (according to package instructions). When the rice is finsihed cooking, add in the BBQ sauce. Mix in until rice is all coated. You can add as much BBQ sauce as you like, depending on how much you like BBQ sauce!
  3. While the rice is cooking, make the black bean hummus. Add all hummus ingredients to a food processor or blender and blend until smooth. Add additional seasoning or lime juice to taste.
  4. Assemble your bowl (see other options above). Grab your bowl, and start with a layer of black bean hummus. Next add the bbq rice and cover with cheddar cheese. You can microwave your bowl at this point to melt the cheese. After, top with lettuce, tortilla chips, or any other toppings.


Notes:

- You could also make this casserole style by baking the hummus, rice, and cheese, until warm, and then adding all other topping.
