Fluffy & Nutritious Vegan Pancakes

I LOVE pancakes. They are my #1 comfort food, and I could probably eat them everyday. Every time I made pancakes I kept thinking that they were not giving me any nutrition. I decided I wanted to make a pancake recipe that wasn’t all flour and sugar! “Healthy” can be pretty subjective, and pancakes might not every be considered “healthy,” but I wanted to do what I could to add nutritional value to this sweet breakfast food. This pancake recipe is made with applesauce and all the vitamins and antioxidants that come with it, and do to the natural sweetness of the applesauce, very little added sugar is needed! I also added ground flax to this recipe to help get in those omega-3s. Lastly, for 1/3 of the flour used in this recipe I use oat flour. Oat flour is high in fiber, has lots of vitamins, and even a little protein. Even with all these swaps to a classic pancake, these pancakes turn out fluffy, golden, and so delicious!

Fluffy & Nutritious Vegan Pancakes

These pancakes are the same as the fluffy and cormforting pancakes we all love, but uses nutritious ingredients! Oats, flax, and applesauce are used to get your day started with lots of fiber and vitamins.

Prep Time: 5 min | Cook Time: 10-20 min | Total Time: 25 min

Servings: 8 pancakes


Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup oat flour (or whole wheat flour or more all-purpose flour)
  • 2 tbsp raw can sugar or coconut sugar
  • 1 1/2 tbsp baking powder
  • 1 tbsp ground flax
  • 1 1/2 cups almond milk
  • 3 tbsp applesauce (see applesauce recipe)
  • 1 tsp vanilla

Instructions:

  1. Combine all the dry ingredients in a medium bowl.

  2. Add in the rest of the ingredients and mix until there are no dry bits left. Do not overmix. Let sit for 2-3 min, the batter will thicken and some bubble should form. This will help the pancakes be fluffy!

  3. With about 1/4 cup at a time plop your pancake batter onto your griddle or pan (use something that won't stick!!) Tip: Once the pancake starts to bubble, check to see if it is golden brown, then flip!

  4. Enjoy! Serve with fruit, maple syrup, butter, or whatever you like!


Notes:

- You can make your own oat flour by pulsing oats in a food processor or high powered blender.
